Jerusalem Artichokes alias "Indian Sunflowers"

Here is some helpful information from a reader about "Indian Sunflowers":

"Reading your recent article on the artichokes, or 'Indian Sunflowers' by yet another name, I want to share what I think is also a benefit of allowing them to grow in a garden. They represent a 'survival food'-available to dig as early as late December through March at this latitude. The only care I give mine is: Thin them when harvesting,  dispose of diseased tubers, and burn the stalks sometime over Winter. They also keep well in the basement, or better yet in my dug storage pit in the garden. As of now we have some in the refrigerator that I dug in March. We eat them in salads or as a snack-raw. And regarding control-they haven't taken over the garden!"
