Perhaps ny quest for the perfect coney dog will lead me to the conclusion that I have to make my own sauce. Here's a recipe from John Whiten of southern Indiana which is claimed to be "the ultimate coney sauce."
John Wilhelm's Coney Island Sauce
3 pounds ground beef
2 19-ounce cans tomato puree
2 tablespoons chili powder
1 tablespoon mustard
1 tablespoon salt or to taste
1 tablespoon pepper or to taste
1 tablespoon Worcestershire sauce
1 tablespoon oregano (dried)
1 medium onion, chopped
Combine all ingredients and cook until boiling is reached; reduce heat and simmer for 2 to 3 hours.
I can't vouch for it yet, of course, but it looks promising enough to try. I might make the mustard spicy brown instead of yellow and throw in a tablespoon of molasses just for fun. In the meantime I will continue to use Skyline chili, still my choice for the best canned product out there.
